Lechon Paksiw

Lechon Paksiw is a special dish to us Filipinos.  We use roasted pig or what we call lechon and cook it in liver sauce, vinegar and some herbs  and spices.  I personally like cooking lechon paksiw because it is so easy to prepare and the ingredients are dumped into the pot and boiled. This is recipe is tried and tested to be a hit to everyone, just follow the recipe below or watch the video on how to cook  the Lechon Paksiw.

Leftover Lechon (roasted pork)

1 and 1/2 cup Mang Tomas Sarsa ng Lechon

1/2 tsp whole peppercorns

pinch of salt

1 Tbsp soy sauce

3 cloves garlic

Few strands of dried oregano

1/2 Tbsp Sugar

2 Tbsp vinegar

1 and 1/4 cup Water

Combine all ingredients  (except the Lechon) in a bowl; mix until well blended.

In a pot, place the leftover Lechon; ppour the sauce mixture over the lechon.  Let boil (do not stir the lechon mixture until it boils). When boiling, lower heat and let simmer for 30 minutes.  Turn off heat.  Service with hot steamed rice.
